1/3 cup creamy or smooth almond butter, raw if possible
½ cup hemp hearts
1/2 cup unsweetened shredded coconut
2 tablespoons raw honey
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 cup cacao nibs

Instructions

Put all the ingredients except the cacao nibs into a food processor.
Pulse together until a thick dough forms.
Transfer to a bowl and mix in ¼ cup of the cacao nibs until they are evenly combined.
Roll into 10 balls.
Place the remaining ¼ cup of cacao nibs on board or plate. Roll each ball into the nibs so they are lightly coated.
Store energy bites in refrigerator or freezer
They keep for 3 weeks in the refrigerator 2 months in the freezer.
