- 5 cups cherry tomatoes, assorted colors, halved (2 containers)
- 4 garlic cloves, chopped
- 2 tablespoons extra virgin olive oil
- Celtic sea salt
- Fresh black pepper
- 10 fresh basil leaves, chopped or chiffonade
- Coarse salt like Maldon
Instructions
- Preheat the oven to 400 degrees F.
- On a sheet pan, toss together tomatoes, garlic, olive oil, salt and pepper and spread them out into one layer.
- Roast for 20 to 25 minutes, until the tomatoes have released their juice and almost completely collapsed. They will be soft, juicy and fragrant.
- Transfer the tomatoes to a serving dish (use a rubber spatula to get every last bit of the juice).
- Sprinkle with basil leaves and sea salt right before serving.
- Serve hot or at room temperature.
